Ingredients:

 2 cups heavy cream
 1 cup whole milk
 1 cup granulated sugar
 1 vanilla bean (split and scraped)
 1/2 teaspoon ground cardamom
 A few threads of saffron
 4 large egg yolks

Instructions:

1. Prepare the Custard Base:
In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is hot but not boiling.
Add the split vanilla bean and saffron threads to the mixture. Let it steep for about 10 minutes to infuse the flavors.

In a separate bowl, whisk the egg yolks. Gradually temper the yolks by slowly adding a small amount of the hot cream mixture into the yolks while whisking constantly.
Pour the tempered yolks back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (around 170-175°F or 77-80°C).

2. Strain and Chill:

Remove the saucepan from heat. Strain the mixture through a fine-mesh sieve into a clean bowl to remove the vanilla bean pieces and any curdled bits.
Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
3. Churn and Freeze:
Once chilled, pour the mixture into an ice cream maker and churn according to the
manufacturer's instructions until it reaches a soft-serve consistency.
Transfer the churned ice cream to an airtight container and freeze for an additional 2-3 hours to firm up before serving.
4. Serve:
Scoop and serve your homemade vanilla bean-infused ice cream, enjoying the delicate notes of cardamom and saffron in each bite.
