Why Madagascar Vanilla Is Perfect for Apple Desserts
Madagascar vanilla beans offer a rich, creamy, and aromatic flavor that pairs beautifully with apples, cinnamon, brown sugar, and butter.
Using whole vanilla beans allows the tiny vanilla seeds to blend into the apple filling, adding aromatic depth and visible vanilla specks.

How to Make Madagascar Vanilla Apple Hand Pies
- Prepare the pastry: Combine flour, sugar, salt, and cold butter in a food processor. Pulse until the butter resembles pea-sized crumbs.
- Add water: Add ice water gradually until the dough comes together. Divide into two discs, wrap, and refrigerate for 1 hour.
- Cook the apple filling: Melt butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, nutmeg, salt, lemon juice, vanilla seeds, and the scraped vanilla pod.
- Soften the apples: Cook for 6–8 minutes until the apples are tender but still hold their shape.
- Thicken the filling: Stir in the cornstarch mixture and cook for another minute. Remove the vanilla pod and allow the filling to cool completely.
- Preheat the oven: Heat to 200°C (400°F). Line two baking sheets with parchment paper.
- Shape the hand pies: Roll the pastry to approximately ⅛-inch thickness and cut into 5-inch circles.
- Add the filling: Spoon about 3 tablespoons of cooled apple filling onto one half of each pastry circle, leaving space around the edges.
- Seal the pastries: Brush the edges with egg wash, fold the dough over the filling, and press with a fork. Cut two small steam vents into each pie.
- Chill: Refrigerate the assembled pastries for 15 minutes.
- Bake: Brush with egg wash, sprinkle with coarse sugar, and bake for 22–25 minutes until golden brown.
- Glaze: Cool on a wire rack for 15 minutes. Whisk the powdered sugar, milk, and vanilla seeds together and drizzle over the hand pies.
Tips for Perfect Apple Hand Pies
- Cool the filling: Warm filling may soften the pastry and cause leaks.
- Don't overfill: Too much apple filling can cause the pies to burst during baking.
- Keep the dough cold: Chilling helps maintain a flaky pastry texture.
- Use real vanilla seeds: Split the vanilla bean and scrape the seeds into the filling for natural vanilla flavor.
- Seal the edges: Use a fork to firmly press the pastry edges together.
Make-Ahead Apple Hand Pies
Assemble the hand pies and freeze them unbaked on a tray. Once frozen, transfer them into a freezer-safe bag.
Bake directly from frozen, adding approximately 5 minutes to the regular baking time, or until the pastry is golden and fully cooked.
Storage and Reheating
Store baked apple hand pies in an airtight container for up to 2 days at room temperature when prepared without perishable toppings. Refrigerate when using a milk-based glaze.
Reheat for approximately 5 minutes at 175°C (350°F) to refresh the pastry.
For an extra kitchen tip, use a clean, fully dried vanilla pod to flavor a jar of sugar.
