Africa's Emerging Vanilla Frontier

Uganda is the world's fastest-growing vanilla producer — and perhaps its most compelling. Nestled in the fertile western highlands, in the districts of Bundibugyo and Kasese at the foot of the Rwenzori Mountains, Ugandan vanilla grows in one of Africa's most biodiverse ecosystems. Volcanic soil, elevation, and consistent equatorial rainfall create conditions that are, in their own way, as irreplaceable as Madagascar.

What distinguishes Ugandan vanilla is character. Where Madagascar beans are celebrated for their creamy sweetness, Ugandan vanilla carries a deeper, more complex profile — woody and smoky at its core, with dark fruit notes and an earthiness that speaks plainly of the land it came from. For serious pastry chefs and chocolatiers, Ugandan vanilla has become the preferred bean for pairings that demand complexity over convention.

The Terroir

Rwenzori Highlands

The Rwenzori Mountains — the fabled Mountains of the Moon — rise to over 5,000 metres above the western Ugandan border. Their foothills trap moisture, moderate temperature, and deposit decades of volcanic mineral sediment into the soils below. It is here, at 1,000 to 1,500 metres elevation, that our Uganda vanilla is grown.

The Craft

Grown with Purpose

Every step of our Uganda program is built around the farmer. From vine to finished pod, we intervene only where care demands it.

Hand Pollination

Each vanilla orchid flower opens for a single day. Our farmers rise before dawn during the flowering season to pollinate every blossom by hand — a toothpick-thin stick transferring pollen from stamen to stigma. It is the most labour-intensive step in vanilla cultivation, and the most critical.

Harvest

Pods are harvested after nine months on the vine, when the tip just begins to turn yellow. Each bean is picked individually by hand. Our farmers are trained to leave under-ripe pods in place, ensuring only fully matured beans enter the curing process.

Curing

Beans are blanched briefly in hot water to halt vegetative growth, then wrapped in wool blankets to sweat for 48 hours. This triggers the enzymatic release of vanillin. The beans are then spread under the equatorial sun each morning and gathered each afternoon for weeks, slowly reducing moisture and deepening colour.

Grading and Dispatch

After several months of conditioning, every batch is graded by hand. We accept only Grade A beans — plump, oily, supple, and deeply aromatic. Within the same week as harvest we pay our farmers in full, then dispatch directly to our customers with no warehousing delay.

Ugandan vanilla is not a replacement for Madagascar, it is a counterpoint. Bold where Madagascar is gentle, earthy where Madagascar is creamy. Prized by chocolatiers and bold-flavour pastry chefs worldwide.
