- 3/4 cup white sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 3 cups milk
- 3 egg yolks, beaten
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons vanilla extract
In a medium saucepan, whisk together the sugar, cornstarch and salt.
Gradually whisk in the milk.
Cook over medium heat, whisking constantly until mixture thickens and begins to boil.
Reduce heat to low and cook 2 minutes more, continuing to whisk. Remove from heat.
Add a small amount of the hot mixture to the beaten egg yolks, whisking constantly.
Then add back to the saucepan, whisking constantly. Bring to a boil over medium heat, then remove from heat.
Stir in the butter and vanilla until smooth. Pour into a bowl and place plastic wrap directly on surface to prevent skin from forming.
Refrigerate until chilled and serve. Enjoy on its own or with fresh fruit.
